Mushroom Soba Noodles

A simple soba noodles with just mushrooms. Serve hot or cold.

Ingredients: 1 serving

Nameko mushrooms
1/2 pack
Shimeji mushrooms
1/2 pack
Maitake mushrooms
1/2 pack
Soba noodles
1 serving
Mentsuyu
1 serving

Steps

1. Shred the shimeji and maitake mushrooms. Wash the nameko mushrooms briefly (I prepared 2 servings in the photo).
2. Cook the shimeji and maitake mushrooms without oil. When they brown, add the nameko mushrooms and cook quickly.
3. Pour the mentsuyu into a bowl and put in the cooked mushrooms.
4. After boiling the soba noodles, shock in cold water if serving cold, or just drain the cooking liquid if serving hot.

Story Behind this Recipe

My friend in Niigata gave me delicious soba noodles, so I wanted to make a simple dish to bring out the soba noodles.
