Oil-free Almond Flour Muffins

The key to moist and fluffy egg- and oil-free muffins is almond flour. These are tasty even when chilled.

Ingredients: 6 muffins

◎Cake flour
80 g
◎Almond flour
40 g
◎Brown sugar
20-30 g
a pinch
◎Baking powder
5 g
80 g


1. Put the dry ingredients marked ◎ in a bowl and mix well with a whisk.
2. Add the milk to the bowl and mix with a rubber spatula.
3. Pour the batter into muffin cups and bake at 180°C for 20 minutes.

Story Behind this Recipe

I made some delicious muffins with vegetable oil and almond flour, and wanted to try making an oil-free version. They turned out fluffy, moist and very tasty. The almond flour gives the muffins a rich aroma and they smell amazing when just out of the oven. They were still tasty the next day when chilled. I eat these at work when I feel like having a snack. They are really satisfying.
