Put the dry ingredients marked ◎ in a bowl and mix well with a whisk.
Add the milk to the bowl and mix with a rubber spatula.
Pour the batter into muffin cups and bake at 180°C for 20 minutes.
Story Behind this Recipe
I made some delicious muffins with vegetable oil and almond flour, and wanted to try making an oil-free version. They turned out fluffy, moist and very tasty. The almond flour gives the muffins a rich aroma and they smell amazing when just out of the oven. They were still tasty the next day when chilled. I eat these at work when I feel like having a snack. They are really satisfying.
In Step 2, mind you don't knead it when mixing with the spatula. Adjust the baking time to suit your oven.
