Tofu Muffins

These healthy, delicious muffins without oil make a nice snack when you're on a diet. They're easy to whip up for breakfast with a hand mixer. They'll even remain fluffy after chilling.

Ingredients: 5 servings

Firm tofu
100g
Sugar
35g
Egg
1 (60g)
Salt (optional)
1/4 teaspoon
Baking powder
1 and 1/2 teaspoon
Cake flour
60g

Steps

1. Blend tofu with a hand mixer until soft, then add the remaining ingredients starting from the top of the list, stirring after each addition.
2. Fill muffin cups about 4/5 of the way, then bake for 20 minutes at 350F/180C. (Adjust the baking time to suit your oven.)
3. They're done baking when a skewer inserted comes out clean.

Story Behind this Recipe

I like making healthy sweets using tofu instead of oil, so after creating recipes for bagels and scones, I present my third for muffins.
