Tofu Custard Cream

This is a quick, easy way of preparing a healthier cream for your desserts. The powdered milk really helps keep the aroma of the soy to a minimum.


Tofu (the processed kind)
300 g
Skim milk
4 tablespoons
3 tablespoons


1. Lightly dry off any excess water from your tofu, and mix into a smooth paste with a whisk. If you use a food processor, you'll be done in no time.
2. Add the powdered milk and honey. That's all1
3. If you press out the excess moisture really well, you'll get a nice, thick texture that feels more like custard.
4. I found mixing in zig-zag motions, rather than in circles, works a little bit better.
