An Eco-conscious Strawberry Jam

An Eco-conscious Strawberry Jam

You know those leftover strawberries from making strawberry syrup. They can be transformed into delicious jam.

Strawberries skimmed out of the syrup
1 package (the photo shows two packs' worth)
Granulated sugar (or caster sugar)
White wine
~2 tablespoons
Lemon juice
1 teaspoon

1. Add all of the ingredients to a pot and boil down over low heat. The strawberries will have lost their color from making the syrup, so mashing them will make it look more appetizing.
2. Minutely skim out the scum while cooking. The taste will vary depending on the condition of the strawberries, so add sugar or wine while checking the taste.
3. Once it has thickened up nicely, pour into a disinfected jar, and it is done.

Story Behind this Recipe

I just couldn't throw out the strawberries after making syrup. It was just too wasteful.
