Chocolate Cookies Made with Vegetable Oil

These are rich and crispy chocolate cookies made with vegetable oil. They have a rich flavor similar to gateau au chocolat.

Ingredients: 1 baking sheet worth

Egg yolk (room temperature)
Natural Salt
Just a little
Lemon juice
1 teaspoon
Vegetable oil
50 ml
Powdered sugar
30 g
20 g
○Cake flour
70 g
20 g
○Cocoa powder
20 g


1. Combine the dry ○ ingredients and sift. Chop the chocolate and melt in the microwave for 3 minutes.
2. Add lemon juice and salt to the egg yolk. Beat well with an electric mixer.
3. When it is well mixed, add vegetable oil a little bit at a time, beating after each addition. The dough will thicken.
4. Add powdered sugar and beat again. Add melted chocolate and beat.
5. Sift the dry ingredients into the bowl and lightly fold in.
6. When the dough comes together, wrap in plastic wrap and shape it into a 3cm x 15cm rectangle. Put it in the refrigerator for at least 30 minutes.
7. Preheat the oven to 340°F/170°C. Slice the cookies into 1 cm.
8. Bake at 340F/170C for 10-13 minutes.

Story Behind this Recipe

I'm really into cookies made with vegetable oil. My daughter loves chocolate, so I came up with this recipe when I was trying to make chocolate cookies she would like. I made these with gateau au chocolat in mind.
