Easy Microwaved Dish - Eggplant in an Asian Marinade

This is a refreshing marinade with a fish sauce base. It's soft and delicious.

Ingredients: 2 servings

Eggplant (slim Japanese type)
Green onion
Sesame seeds
as desired
●Fish sauce
2 tablespoons
●Lemon juice
2 tablespoons
●Ginger (grated)
1 piece
1/2-1 tablespoon (to taste)
1 tablespoon


1. Combine the ● ingredients in a dish.
2. Cut the eggplant lengthwise into 2 or three pieces and cut into easy-to-eat pieces. Cut the green onions in the same way.
3. Wrap with plastic wrap and heat in the microwave until wilted (3-4 minutes). Marinate in Step 1's marinade and mix until evenly coated.
4. Once cooled, chill in the refrigerator and serve.
5. I used this fat eggplant. If you use a thin eggplant, I suggest using a few.
6. Enjoy!

I wanted just one more easy dish! I had eggplant in the refrigerator, so I made this and it was delicious.
