Cut the chicken into bite-sized pieces. Put the cola, soy sauce and ginger in a plastic bag with the chicken pieces and marinate for 20 to 30 minutes.
Pat excess moisture with kitchen paper towels, and coat the chicken with mixed cake flour and katakuriko. Heat oil in a pan and fry the chicken, starting at medium heat and finishing at high to make them crispy.
Drain the oil and put the chicken on serving plates.
Story Behind this Recipe
Some recipes are simmered in cola, so why not try it for a fried recipe I thought, and just tried it almost as a joke. The result was surprisingly tender and juicy.
Use a sturdy plastic bag for Step 1. Just fry this as you would karaage chicken. When it's nice and crispy, it's done.
