Milk Sandwich Cookies with Cream Filling

The cream filling is easily made just by setting aside some of the ingredients used for the cookie dough. These cream-filled sandwich cookies are mildly sweet with a milky fragrance.

Ingredients: About 16 cookies

◎Cake flour
70 g
◎ Corn starch
20 g
◎Baking powder
1/4 teaspoon
50 g
Condensed milk
3 tablespoons


1. Bring the butter and condensed milk to room temperature. Combine the ◎ dry ingredients and sift.
2. Cream the butter, add condensed milk and mix well. Remove and set aside 1 tablespoon of the mixture (→ for the cream filling)
3. Add the dry ingredients all at once and fold in with a spatula.
4. Roll the dough into a 3-3.5 cm cylinder. Wrap with plastic wrap and chill in the refrigerator to rest for at least 30 minutes.
5. Preheat the oven to 340F/170C. Slice the dough to 5 mm thick and lay on a baking tray lined with parchment paper.
6. Bake for about 12-13 minutes at 340F/170C.
7. When they're done baking, cool the cookies on a rack.
8. When cool, stack the cookies in pairs. Spread the cream filling between the cookies and lightly press.
9. They're done.
