Shrimp-shell Miso Soup

My mother used to make miso soup a lot. The umami of the shrimp heads is sooo good!


Shrimp heads (botan shrimp, amaebi, etc.)
6 to 8 heads
Green onions
to taste
About 3 tablespoons
1 tablespoon
Dashi stock
2 cups (400 ml)


1. Sashimi-ready shrimp is fine. In our house we usually eat the bodies as sashimi, and use the heads for this miso soup.
2. Put the dashi stock in a pan and heat. Put in the shrimp heads and sake.
3. Skip off the scum carefully. Dissolve in the miso. Sprinkle with chopped green onions just before serving. Done!

My mother used to make this for us a lot. It's a family favorite miso soup. Some fishmongers will sell you just the shrimp heads! It's really delicious so please give it a try!
