Strawberry Daifuku: Just Microwave the Shiratamako!

Strawberry Daifuku: Just Microwave the Shiratamako!

You can make the mochi dough in about 4 minutes with a microwave. After that, you need to just wrap the dough around the filling, so this is an easy recipe. I used shiro-an white bean paste for this recipe, but ordinary anko red bean paste would be good too.
This only takes and hour to make!

Ingredients: 10

Shiratamako
150 g
Granulated sugar
50 g
Water
200 g
Red food colouring
a little
Koshi-an (I used shiro-an)
200 g
Strawberry (small or medium)
10
Katakuriko
to taste

Steps

1. Hull the strawberries. Divide the bean paste into 20 g portions. Flatten on your hand to make a pancake. Wrap the strawberry in the bean paste.
2. Make the mochi dough. Put the shiratamako and granulated sugar in a bowl. Add and mix water gradually.
3. Cover with plastic wrap. Microwave for about 2 minutes at 500 W. Take out from the microwave and stir. Add red food colouring dissolved in a little water (not listed). Add colouring until dough becomes the pink colour you like.
4. Flatten on your hand to make the dough into a round circle. Wrap the bean paste with the dough. If it's sticky, coat katakuriko on your hands.
5. Flatten on your hand to make the dough into a round circle. Wrap the bean paste with the dough. If it's sticky, coat katakuriko on your hands.
6. Shape into neat round dumplings and serve!

Story Behind this Recipe

I often make strawberry daifuku filled with the tsubu-an. I wanted to make pink colour strawberry daifuku for the spring.
