Muffins with Cheese-Wrapped Potatoes Inside

Potatoes are snugly wrapped in cheese and set in the middle of each muffin. These are tasty savory muffins.

Ingredients: Serves 6

1 large
Easily meltable cheese
3 slices
Coarsely ground black pepper
1/2 teaspoon
50 g
25 g
White flour
120 g
Baking powder
1 teaspoon
1 heaping tablespoon
Parsley (for garnish)
As needed


1. First, rinse the potato well with water, and microwave for 1 minute. Cut the potato into 6 wedges and set aside to cool.
2. Lightly mix the sugar and margarine together in a bowl. Add the egg and mix again.
3. Sift in the baking powder and flour, and mix briskly. Finally, add the milk, mayonnaise, and black pepper. Stir a final time to distribute the ingredients evenly.
4. Cut each slice of cheese in half. Place a piece of potato on each half-slice.
5. Wrap and roll the cheese around the potato. Repeat this until all 6 pieces are wrapped.
6. Divide the mixture from Step 3 evenly into 6 muffin cups. Add 1 wrapped potato into each cup. Sprinkle each cup with parsley.
7. Bake in a 180°C oven for 30 minutes. The muffins should be done.
8. Here's a muffin cut in half. The potato is fluffy and delicious.
