There aren't any adzuki beans for sale around these parts lately so I decided to boil some kidney beans instead to make mock shiruko. If you have a food processor, you can make this dish in just 15 minutes.
Drain and rinse the canned kidney beans. Add all of the ingredients to a saucepan and leave the mixture to simmer for 10 minutes.
When the mixture has cooled, pour it into a food processor (don't drain it) and blend it for 1-2 minutes.
Add the mixture back to a saucepan and bring it to a boil. Then it's ready to serve ♪
Story Behind this Recipe
I had some shiratamako anyway so I decided to make some instant shiruko out of kidney beans to go with it. Making anko from adzuki beans usually takes around a day so the flavour of this shiruko is a bit different. But on the other hand it has a less characteristic flavor that may be easier for shiruko novices to enjoy.
This is mock shiruko so I only added a little bit of sugar. I blended my kidney beans in the food processor until they were still a little lumpy.
