Deep-fried Chicken Wings with Sweet and Savoury Soy Sauce Glaze

Deep-fry the chicken wings slowly and coat the crispy chicken with sweet and savoury sauce. Serve straight away.

Ingredients: about 15 wings

Chicken wings -- the midsection and the tip
about 150g
Coarsely ground salt and pepper
to taste
Coarsely ground black pepper
to taste
Plain flour
as needed
White sesame seeds
to taste
Sweet and savoury soy sauce glaze
3 tablespoons
2 tablespoons
2 tablespoons
Soy sauce
4 tablespoons
Dashi stock (powder)
1/2 teaspoon


1. Mix together all the sauce ingredients in a sauce pan and bring to a simmer. Turn the heat off.
2. Coat the chicken wings on all sides with coarsely ground salt and pepper. Sprinkle again with just the coarsely ground black pepper.
3. Coat the chicken wings evenly with flour.
4. Shake off the excess flour.
5. Heat the oil until inserted chopsticks bubble straight away.
6. Put the chicken wings in the oil and deep-fry them over low to medium heat (deep-fry in batches if necessary).
7. After 5 minutes the chicken wings that sank to the bottom start to float to the surface. Turn over each chicken wing and deep-fry for a further 5 minutes.
8. Turn up the heat to high and deep-fry until very crispy (about 15 minutes altogether).
9. Drain off the oil.
10. Coat the chicken wings with the sauce from Step 1 while they are still hot.
11. Arrange the chicken wings on a dish and sprinkle over with white sesame seeds. Sprinkle with more coarsely ground black pepper if you like.
12. Transfer to a serving plate and drizzle over the sauce.

I used to buy sauce at a shop and it was quite nice. I noticed it was quite expensive so I started to make the sauce for myself.
