Okara Salad for Dieters

This dish is just like potato salad. Okara is cheap and inexpensive.

Ingredients: 2 servings

Fresh okara
as needed
Frozen mixed vegetables
as needed
Canned tuna
1 small can
to taste
Salt and pepper
to taste


1. In a frying pan, stir and dry-roast the okara over medium heat. Take care not to burn it.
2. Slice the onion and soak it in water.
3. Parboil the mixed vegetables in boiling water.
4. Drain the mixed vegetables and the sliced onions. Combine the vegetables, onion, and the canned tuna including the oil with the okara from Step 1.
5. Season with mayonnaise, salt, and pepper to finish.
