Shio-kombu Cabbage in Lemon Juice in 5 Minutes

This is super easy -- all you have to do is mix the ingredients together! Deliciously sour and addictive! Gastro pub cooking.

Ingredients

Cabbage
1/4 head
Shio-kombu
2 pinches
Lemon juice
60 ml or more

Steps

1. Quickly rinse the cabbage. Spring cabbage works well with this dish, since it's more tender than regular cabbage.
2. Toss the cabbage in a bowl with the salt and lemon juice. (I recommend freshly squeezed lemon.)
