Macrobiotic Onions Simmered in Plum Vinegar

All you have to do is cut the onion into wedges and simmer in plum vinegar. It's so simple, but amazingly delicious! This goes great in potato salad! This is great to add to bento lunch boxes, as it keeps for quite a while!

Ingredients: 4-5 servings

Onion
2 medium
Plum vinegar
About 2 tablespoons
Water
100 ml upwards

Steps

1. Cut the onion in half and then into wedges.
2. Now add the water, plum vinegar and onions to a thick-bottomed pot and, to begin, set it to a high heat. Once boiling, reduce the heat to low. Simmer it till the liquid reduces to a sauce.
