Sweet potatoes (Japanese-type with purple skin and white flesh)
About 3 medium
1 teaspoon plus
Black sesame seeds
Wash the sweet potatoes and cut up roughly. Soak in a bowl of water for about 10 minutes.
Drain the potatoes and place into the bowl of a rice cooker. Sprinkle with sugar, and shake the bowl well to coat the potato pieces, taking care not to let things spill out!
Add the water and soy sauce, mix quickly. Set the bowl in the rice cooker and switch on!
When the rice cooker cycle is done, sprinkle on some black sesame seeds to finish! Amazingly good!
Story Behind this Recipe
My kids had started to ask for daikaku imo ("university" potatoes) but I always used to think it would be too much work. One day I told my friend about it and she taught me this recipe. Whenever we get some sweet potatoes we make this.
There aren't any hints in particular. Just put it in the rice cooker, and you can do other things while it cooks. This is great for people who are really busy and don't have much time to cook. It's not a main dish maybe...
