Deep Fried Eggplant with Mayonnaise

Who would have thought that deep fried crispy eggplant could be so delicious?

Ingredients: 5-6 servings

Eggplant (slim Japanese type)
3 medium
3 tablespoons
1 1/2 tablespoons
Green onion or scallion
as much as you like
Frying oil (vegetable oil)
as needed


1. Wash the eggplants, wipe off the moisture with a paper towel, and chop them roughly.
2. Deep fry the eggplants in 180°C oil until crispy, drain the excess oil and put them in a bowl.
3. Mix the mayonnaise and mentsuyu well, put the sauce on the serving plates along with the eggplant, sprinkle on some green onions, and enjoy.
