Diet-Friendly Okara and Tofu Kanten Cheese Cake

Diet-Friendly Okara and Tofu Kanten Cheese Cake

All you need to do is to mix the ingredients in a food processor, bake and chill! It is a super-healthy desert that contains okara, tofu, kanten, with no oil or eggs. A hint of lemon adds a zesty, tart, cheesecake-like flavor.

Ingredients: four 7.5 cm round ramekins

Fresh okara
100 g
Tofu (I used silken tofu)
200 g (with liquid)
50 g
Skim milk powder
30 g
Lemon juice
3 tablespoons
50 g
Oligosaccharide sugar (or honey)
2 tablespoons
Powdered kanten
2 g

1. Preheat the oven to 170℃. Add all the ingredients into the food processor and push start!
2. Once the mixture is smooth and an even consistency, it is ready. It should look like a thick paste.
3. Add the mixture into the ramekins. You do not need to line it with parchment paper or grease it. Smooth out the surface with a spoon and bake it in the 170℃ oven for 30 minutes.
4. The picture shown here is what it should look like after baking. If you insert a bamboo skewer, a small amount of batter may stick to it. Once it is chilled, it will harden. Cool it down and chill it in the refrigerator and it is done.
5. Since it contains kanten, once the mixture is completely chilled, it should come out of the ramekins easily (you are seeing the bottom of it in the picture).
6. I made a banana cheese cake style snack with 1 well-ripened banana with no sugar and 50 g of honey in it. I may like this one better.

Story Behind this Recipe

I referred to user Cafe703's recipe for Dieter's Okara, Tofu, and Kanten Chocolate Cake and user Spain's Healthy Honey Lemon Muffin and Cake with Okara, and since both were delicious, I combined those 2 recipes to make my own snack. I am on a diet right now and I am very much interested in a healthy snack, so I made this snack for myself.
