Moist and Chewy Rice Cooker Tofu Cake

No need to drain the tofu. You can make moist and chewy cake with or without a hand mixer.

Ingredients: 1 cake in 5.5 cup rice cooker

Tofu (silken)
1 block (300 g)
Egg
1
White flour
300 ml
Sugar
4 tablespoons
Baking powder
2 teaspoons
Vanilla extract
a few drops (a little bit more than usual))

Steps

1. Mix all the ingredients with a hand mixer. If you don't have one, you can mix with a whisk.
2. Use a quick cook function and bake the mixture twice. The cake becomes fluffy using a hand mixer as the photo. I only used flour in the main picture. I served with homemade yuzu tea.
3. This is a matcha flavored version. It has a nice matcha color and fragrance. I added 1.5 teaspoons of matcha.
4. This one is with raisins.
