I took the base sweet bread recipe, added walnuts and cinnamon, and made it into my cinnamon roll recipe. The dough is so soft that the sugar melts into it and becomes crunchy. When you want to make sweet bread, this is the best.
Once the base sweet bread dough has finished the first rising, punch down the dough. Roll it into a round shape, and then cover it with a moistened and then tightly wrung out towel. Let it rest for 20 minutes after that.
Mix together the A) ingredients. Finely chop the walnuts. Roll out the dough into a rectangular shape. (About 25cm x 45cm)
On top of the dough, spread out the combined A) ingredients, and then sprinkle the walnuts. You put the walnuts in now, not after you have finished rolling it up.
Starting from the bottom, roll up the dough and make sure that you close it tightly. Next, cut it into equal parts.
Spray water on the dough and let the dough rise again for 20 minutes.
Spray water on the dough once again and then bake them for 10-12 minutes in your preheated to 200℃ oven.
Take the granulated sugar (or powdered sugar) and add water a little bit at a time until it becomes a paste-like icing.
Once they have cooled, decorate with the icing and it's done!
Story Behind this Recipe
I wanted to eat a sweet bread, so I made this recipe. I love cinnamon rolls with walnuts in them. I used roasted walnuts because when you eat them, it gives the rolls a unique scent.
As for how to make the base sweet bread dough, please take a look at the recipe listed in the ingredients. I recommend using walnuts roasted walnuts if you can. You can roast them in the oven at 140℃ for 15 minutes. When you are rolling the dough, if it's too hard, you can break it in two to make it easier to handle.
