Rich Chocolate Gateau

A recipe to make rich chocolate gateau with lots of chocolate. Moist and bittersweet. The inside turns out medium rare. Let it rest for over half a day to improve its taste.

Ingredients: 15cm cake pan

100 g
Unsalted butter
40 g
Heavy cream
50 ml
2 (brought to room temperature)
40 g
[A] Cake flour
10 g
[A] Cocoa powder
12 g


1. Microwave the chocolate and butter to melt and soften (90 seconds at 700W). Add heavy cream and keep it warm (50℃).
2. Add sugar into the egg and whip well until it sits in your whisk.
3. Fold in the mixture from step 1 and mix well.
4. Combine and sift the [A] ingredients into the bowl. Fold in lightly. Avoid any kneading.
5. Pour into the pan and bake for 15 minutes in a 180℃ preheated oven. Then bake for another 20 minutes at 160℃.
6. The cake is very soft when freshly out of the oven, so take care to cool it down before removing the pan. Slice it into desired sizes.
7. Here's a variation using a 15cm cake pan. Even when it occupies the whole pan when it's freshly baked, sometimes the batter sinks when it's cooled down. This is actually how chocolate gateau cakes behave - don't worry. Decorate with lots of powdered sugar.

I love chocolate gateaus because you can really taste the chocolate. That's why I made my own variation that suits my taste. It's moist, rich, and bittersweet - perfect for adult guests. My favorite way to eat it is to slice a small piece and serve with some whipped cream.
