Roast walnuts in a 140°C oven for 15 minutes. Chop to your desired size.
Place the chocolate and butter in a microwave-safe bowl and heat until melted (about 1 1/2 minutes on 700W).
Combine the egg and brown sugar. Blend well with the mixture from Step 2.
Fold in the ingredients marked (A) gently. Add the walnuts last.
Pour the batter into a pan and bake for 20 minutes in a preheated 180°C oven.
Once it's cooled, remove and cut. It's done.♪
Story Behind this Recipe
I don't like heavy, dense brownies, so I experimented with recipes to create lighter brownies with a true chocolate taste. I usually like my desserts less sweet, but brownies should be sweet, so I hit the middle note of sweetness with these. I enjoy rich sweets once it gets cold, so dieting during the winter is hard for me.
You can substitute superfine sugar for the brown sugar and use your favorite brand of chocolate (I like the bitter Ghana-brand). I recommend using unsalted butter. For a lighter texture, whip the eggs white into stiff peaks before folding into the batter. Feel free to experiment.♪
