Quick, Easy and Beautiful Sake Lees Muffins

Just mix it all up with a whisk. These fluffy muffins are made with sake lees. Serve for breakfast or as a snack.

Ingredients

Sake lees
40 g
Boiling water
50 ml
★ Cake flour
150 g
★ Baking powder
6 g
Eggs
2 large
Sugar
70 g
Vegetable oil
2 tablespoons
Walnuts, sesame seeds, chocolate chips (optional)
to taste

Steps

1. Sift together the ★ ingredients.
2. Dilute the sake lees in boiling water, adding a little at a time in several batches and stirring with each addition. I use a fork to stir. Preheat the oven to 170℃.
3. Add the sugar, eggs, and vegetable oil into a bowl and mix.
4. Add the diluted sake lees and mix.
5. Add the sifted ★ ingredients and mix once more. Mix in the walnuts, sesame seeds, chocolate chips or other ingredients of your choice here. I added walnuts, white sesame seeds, and black sesame seeds in the photo.
6. Pour into muffin cups and bake for 20 to 25 minutes, then they're done! Voila!

Story Behind this Recipe

I make sake lees soup in the winter, so I decided to make a snack with it. I'm posting it here to share with others. While my children have been eating these since they were little, it might be best to take a bite first before serving it to your kids.
