Cut each boiled potato into 2 or 4 pieces. Place into a plastic bag. Add the olive oil and the mixed herbs. Mix the ingredients by massaging the bag from the outside. Let sit for 30-60 minutes to allow the flavors to blend in. Preheat the oven to 200℃ and bake for 15-20 minutes.
One COOKPAD user used new baby potatoes. Give it a try!
If using a frying pan: drain the water from the boiled potatoes. Heat oil in the frying pan, add the spices and the potatoes, and cook.
Story Behind this Recipe
I had some leftover boiled potatoes from when I made Raclette.
Using boiled potatoes will decrease the cooking time. Wash the skins well. Once the water begins to boil, add plenty of salt and boil the potatoes. I used leftover boiled potatoes this time. If you like a crispier texture, use more oil. I used a mixture of herbs made for country potatoes, but if you don't have any, you can combine garlic powder, salt, pepper, and rosemary.
