Easy Apple Cake

An easy fluffy apple cake made with olive oil instead of butter.

Ingredients: 18 cm square pan

90 g
Olive oil
70 ml
◆ Cake flour
140 g
◆ Baking powder (optional)
1 teaspoon
Powdered sugar (optional)
a small amount


1. Sift together the ◆ ingredients 2-3 times. Line your pan with a baking sheet. Preheat the oven to 170°C.
2. Crack an egg open into a large bowl. Add the sugar in thirds, whisking until pale and thick.
3. Add the olive oil a little at a time while mixing.
4. Add the sifted ◆ ingredients and fold in until there are no flour streaks.
5. Cut the apples into 1-2 cm chunks and add to the batter. Using a a spatula, quickly fold the apples into the batter.
6. Pour the batter into the pan and bake at 170°C for 35 minutes. While baking, if it looks as though the top is browning too fast, cover with aluminum foil.
7. Remove from the pan once cooled. Dust with powdered sugar.

This is a variation on a recipe I once copied from some printed source. It's a family favorite that I've been making since high school.
