Flavored Herring Roe

Herring roe is filled with the thriving offspring of their progenitors.
These flavored herring roe have an addicting strong flavor that can't be found in supermarkets.

Ingredients: 4-5 servings

Salted herring roe
500 g
☆Dashi stock
200 ml
160 ml
3 tablespoons
☆Usukuchi soy sauce
2 tablespoons
Bonito flakes
to taste


1. Immerse the salted herring roe in lightly salted water for 6-8 hours to remove the salt. (Change out the salt water every 2-3 hours)
2. While the herring roe are soaking, make the marinade. Add all of the ☆ ingredients into a pot and boil. Then let it cool.
3. Carefully peel off the thin outer skin of the herring roe. It's easy to do if you use a paper towel.
4. Place the herring roe into a plastic container, add the marinade, and let soak for half a day to one night.
5. Wrap the dried bonito flakes in a paper towel. Soaking them together will increase the flavor.
