Baker's Rich Egg Sandwich

Baker's Rich Egg Sandwich

A sandwich stuffed full of eggs just like what's sold at the bakery. I recommend you use some fluffy bread!

Ingredients: 1 serving

Sliced bread
2 slices
about 3 tablespoons
1/4 teaspoon
as needed
Japanese mustard
a small amount (to taste)

1. Make a hard boiled egg. In a pot, put in just enough water to cover an egg (but don't put the egg in yet) and boil. Once the water is boiling, turn the heat to medium and put the egg in the water. Boil for 10 minutes and turn off the heat. Keep the egg in the hot water for another 15 minutes. Pour in water to cool and then peel the egg.
2. Put the egg into a bowl and mash with a fork until crumbly.
3. When the egg has become crumbly, mix in the mayonnaise and salt.
4. Spread the margarine and Japanese mustard on a slice of bread. Pile the egg mixture high (like a mountain) onto the middle of the bread. Top with another slice of bread, then while holding down the sides with chopsticks pressed down by your fingers, cut off the crusts.
5. Cut the sandwich in half and enjoy.

Story Behind this Recipe

I wanted to try making the sandwich I often buy at the bakery at home.
