Roasted Green Tea Pudding

Enjoy the aromatic flavor of roasted green tea in these delicious pudding cups. It's super easy despite the impressive presentation.

Ingredients: 5-6 pudding cups' worth

4 tablespoons
250 ml
Sugar (cane sugar or soft brown sugar)
40-50 g
Heavy cream (or whipping cream)
150 ml
Gelatin powder
5 g
2 tablespoons
(For the garnish) Heavy cream or whipping cream
50 ml
1 teaspoon
Tea leaves for decoration
a small amount

1. Heat the roasted green tea leaves and the milk in a small pan. When it gets bubbly, turn the heat to low and simmer it for 2 minutes. Keep stirring with a spatula.
2. Add 2 tablespoons of water into the powdered gelatin. Microwave it for 20 seconds to heat and dissolve.
3. Strain the simmered tea through a tea strainer as you transfer it into a bowl. Add the sugar and heavy cream to mix.
4. Add the dissolved gelatin and mix with a whisk.
5. Cool the bowl in ice water as you stir the mixture occasionally.
6. When it gets thick, transfer it into a container. Chill in the fridge for 1-2 hours to harden.
7. Combine the ingredients for the whipped cream in a different bowl. Whip until it forms stiff peaks. Top pudding with whipped cream and tea leaves just before serving.

Story Behind this Recipe

This is my own variation of a recipe that was taught to me by a neighbor.
This recipe is so simple that you only need to simmer, stir, and chill the cups.
You can make them even healthier by reducing the amount of sugar!
