Maple Cake with Potato

This cake has a simple and gentle taste.

Ingredients: 18 cm diameter round cake pan

Potatoes
Net weight 300 g (about 3 medium sized)
Cake flour
80 g
Baking powder
1 teaspoon
Butter
50 g
Granulated sugar
50 g
Egg
1
Milk
100 ml
Maple syrup
2 tablespoons
Powdered sugar (if you like)
as needed

Steps

1. Peel the potatoes, and microwave for about 6 minutes at 500-600 W, then mash them well. Preheat the oven for 170°C.
2. While Step 1 is warm, add the butter and granulated sugar in that order. Melt and mix them well each time.
3. Add the beaten egg, maple syrup, and milk, and mix well.
4. Combine the cake flour and baking powder, and sift them into the bowl. Mix with a spatula.
5. Pour the batter into the cake pan lined with parchment paper. Bake in the oven preheated to 170°C for about 40 minutes.
6. When baked, let it cool, then remove from the pan.
7. Sprinkle with powdered sugar if you like. Cut into pieces, and serve on a plate.
