Rice Bowl with Egg and Chinese Cabbage

The Chinese cabbage absorbs the umami and binds with beaten eggs. It's a cheap dish that you can create with whatever meats you have at hand.

Ingredients: 5 servings

Chinese cabbage
1/4 (large)
Any proteins (canned tuna, chikuwa, pork, atsuage, etc)
I used canned tuna and a pack of chikuwa
3 tablespoons
2 tablespoons
1 teaspoon
Egg (large)
Shredded nori seaweed, Shichimi spice
to your liking


1. Combine the Chinese cabbage cut into bite-sizes, whatever protein you prefer, mentsuyu, and mirin in this order in a pot or pan with a lid. Heat the pot or frying pan, add salt when the cabbage softens and the flavor has absorbed. Season well.
2. Pour the beaten eggs, and finish cooking when the eggs are soft-set.
3. Pour over rice and enjoy. It can also be served as a side dish.
