A secret ingredients our pork miso soup boosts the richness.

Thinly sliced pork or pork belly
150 = 200 g
Burdock root

Daikon radish
1/4
Carrot

1/2
Your favorite ingredients
to your liking
Sesame oil
1 tablespoon
Sugar
1.5 to 2 tablespoons
Dashi stock
as needed
Miso
as needed
Ichimi spice, grated ginger
to taste

Steps

1. Cut or slice the ingredients as you like. I used sweet potato.
2. Heat sesame oil in a pan and fry the pork. Add sugar when the pork is almost cooked and continue to fry.
3. Add and fry the rest of the ingredients and add the dashi stock (I always use dashi powder). Cook until everything is tender.
4. After the ingredients are cooked through, add the miso. Grated ginger will warm you up and ichimi spice will add a bit of spice to the soup.

Story Behind this Recipe

When I helped to make pork soup for our local town's marathon, I saw elderly ladies adding sugar to the soup and I tried it out.
