Crispy-Fried Hanpen Fishcake with Cheese

Crispy-Fried Hanpen Fishcake with Cheese

The outside is crispy from the melted cheese, and the inside is chewy from the grated potatoes. You will enjoy the texture of this dish.

Ingredients: 2-4 servings (about 12 pieces)

1 large
1 small
Sliced cheese
2 slices
Sliced ham
2 slices
3 tablespoons
Vegetable oil
as needed

1. Cut the cheese and the ham into 5 mm cubes.
2. Grind the hanpen in a food processor or with a mortar and pestle, and transfer to a bowl.
3. Add the egg and the katakuriko in that order. Mix well each time. Add Step 1 to the bowl and mix.
4. Peel the potatoes. Grate them over the bowl and mix with the other ingredients.
5. Heat vegetable oil in a pan. Spoon Step 4 into the pan. Fry them for 4-5 minutes over medium heat.
6. When lightly browned, flip them. Fry the other side for 3-4 minutes as well, and turn off the heat.
7. Serve on a plate.

Story Behind this Recipe

Hanpen comes in handy; it has nice flavour and cooks through easily. I created this quick and easy recipe by using common ingredients I had on hand.
