Cute Candy Cookies

Cute Candy Cookies

These are cute cookies with a candy window. Made from cocoa dough, so the slight bitterness of cocoa and the sweetness of the candy go well together for a delicious taste. Makes a nice sweets present for Christmas or Halloween.

☆Cake flour
80 g
☆Cocoa powder
5 g
☆Black cocoa powder
15 g
50 g
40 g
Egg yolk
1 tablespoon
Vanilla extract
A few drops
About 10 pieces

1. Soften butter and knead until it whitens. Add sugar and mix well. Add egg yolk, milk, and vanilla extract and continue to mix.
2. Sprinkle the ☆ dry ingredients and mix in a cut and fold motion. At a certain point, you can start mixing with a knead-like cut and fold motion. Form into a lump and refrigerate for 30 minutes.
3. Use a rolling pin, etc to smash the candy into small pieces. It'll scatter, so you can put it in a plastic bag and then smash.
4. Once you've refrigerated the dough for 30 minutes, preheat your oven to 160℃. Roll the dough out to 3 to 5mm thick and use a cookie cutter to cut shapes. Also use a cutter to cut out a shape in the middle. Bake at 160℃ for 8 minutes.
5. Remove the cookies from the oven and put the smashed candy bits in the opening. Try to fill in gaps as much as possible. Then bake again at 160℃ for 5 minutes.
6. And it's complete. Let it cool on a flat surface and don't move it around. If there are any gaps in the candy, fill in with more candy bits, and bake on low heat (140℃ to 150℃) until the gaps are filled in.

Story Behind this Recipe

I saw a cookie with a candy window on a TV show awhile ago. I thought if it could be made with a black cocoa cookie, it'd make for a nice contrast and be really cute, so I gave it a shot. When I put the candy in before baking the cookie dough would become smashed or stick to the candy and it was quite difficult. So I changed the procedure to add the candy during the middle of baking.
