Bacon and Spinach Penne Pasta

This is a super easy and delicious penne dish.

Ingredients: 2 servings

Pasta (penne)
2 servings (about 150g)
3-4 strips
4 bunches
Pasta cooking water
50-70 ml
Olive oil
2 tablespoons
Salt and pepper
to taste
1 clove (minced)
Eggs (optional)


1. Cut the bacon into 3cm pieces, and the spinach into 4cm pieces.
2. Boil the penne.
3. While the pasta is cooking, sauté the garlic and bacon in olive oil.
4. Once the bacon begins to cook, add the spinach. Season with salt and pepper (slightly saltier than what you're used to should be fine).
5. Once the spinach has wilted, mix in the pasta and reserved pasta water. Lightly simmer together. Adjust the flavor with salt and pepper to taste and serve.
6. The dish tastes even better if you top it with a poached egg, or a fresh egg yolk.
