Spinach & Nectarine Salad

This salad contains the excellent combination of sweet smelling nectarines, cheese, and just a touch of cinnamon.

Ingredients: 2 servings

Salad spinach leaves
200 g
Cheese (Feta, Goat, Gorgonzola, etc.)
4 tablespoons
Nectarine (ripe)
1 (130 g)
Lemon juice
1 tablespoon
Balsamic vinegar
1/2 tablespoon
Apple juice
3 tablespoons
1/2 tablespoon
Olive oil
1 tablespoon
Cinnamon Sugar Raisin Nuts Topping
California Raisins
1/2 cup
Walnuts, pecan, etc.
1/2 cup
Cinnamon powder
1 teaspoon
Granulated sugar
2 tablespoons
1 tablespoon


1. Make the dressing. Place all of the ingredients into a food processor and puree. Then let it chill.
2. Add the cinnamon, granulated sugar, and water to a frying pan. Turn on the heat and once it comes to a boil, lower the heat to low. Add the raisins and nuts, and stir as it cooks. Once the liquid evaporates and everything is coated with the cinnamon sugar mixture, remove from the heat. Spread it out so that it doesn't stick, and let it cool.
3. Thinly slice the nectarine for the salad with the skin on. Finely crumble the cheese. Pile the salad type spinach leaves on a plate and top with the nectarine and cheese. Drizzle on the dressing. Lastly, top with the cinnamon sugar raisin nuts.
