Easy Sweet Potato Cakes

Easy sweet potato cakes!
Cooking time: about 30 minutes.

Ingredients: 6 cakes

Japanese sweet potato (medium)
1 scant tablespoon
about 2 pieces (as needed)
20 ml (adjust if needed)
Egg yolk


1. Steam the sweet potato. (Of course you can boil or microwave it too!) ②Mash the sweet potato. ③Add the ● marked ingredients while hot and knead. ④Put the mixture in aluminum cups, adjust the shape, and brush the surface with the egg yolk.
2. Bake in the oven (or toaster oven) for about 5 minutes. When the surfaces are golden brown, they are done.

Story Behind this Recipe

I wanted to eat Asian sweet potato so I bought one, but I couldn't decide what to do with it. I thought about it for 3 days and finally decided to make sweet potato cakes.
