Healthy Atsuage Fried Tofu Burgers Lots of Sesame

This is a healthy burger made with atsuage fried tofu with a sesame flavour. Although this doesn't use meat, potato is used as a binder, so it's very satisfying.
I also can't get enough of this crispy texture. Maybe this can also be used as a macrobiotic recipe?

Ingredients: yields 3 patties

Atsuage (firm)
1/2
Potato
1 medium
Sesame seeds
to taste
Soy sauce
1 teaspoon
Salt
a small amount
Panko
1 tablespoon
All-purpose flour
1/2 tablespoon
Juice from grated ginger (optional)
1 teaspoon

Steps

1. Either boil the atsuage in water (about 1 minute) or microwave (about 40 seconds). Lightly squeeze out the excess water. Roughly tear it apart with your hands.
2. Grate the potato and add this to Step 1. Add the rest of the ingredients and divide the mixture into 3. Press into round patties.
3. Heat sesame oil in a frying pan and fry both sides until brown.
4. If you want a light dish, have it with soy sauce or ponzu sauce. If you want a richer dish, have it with tonkatsu sauce. My children eat them on their own. I like to have mine with ponzu sauce and ginger.

I wanted to make a healthy burger without meat. When I used potatoes as a binder, it turned into a hearty burger.
