Yakitori at Home

It might not be the same as yakitori cooked over charcoal, but you can recreate the taste of restaurant yakitori easily at home with a frying pan or an electric griddle.

Ingredients: About 20 skewers

Chicken thighs
Japanese leek (thin)
●Soy sauce
3 tablespoons
3 tablespoons
2 tablespoons
1 tablespoon
●Dashi soup stock
1 teaspoon
●Grated garlic
1 clove
2 tablespoons


1. Remove the skin and excess fat, cut into 2 cm pieces, and sprinkle with a little sake (not listed). Cut the leek into 2 cm pieces.
2. Skewer the chicken and the leek. Combine the ● ingredients and set aside.
3. Add a little oil to a heated frying pan and place the skewers evenly in the pan. Cook both sides well.
4. Cover with a lid and steam cook for 3 minutes on medium heat. Turn off the heat and leave for 5 minutes.
5. Transfer the yakitori to a plate and wipe clean the frying pan with a paper towel.
6. Heat the frying pan again and add the sauce. Once it starts to bubble, add the sugar. Once it has a creamy thickness, place in the chicken again and mix well with the sauce and it's complete.
7. I cooked some atsuage as well and seasoned it with the sauce. You can sprinkle on ichimi spice and serve them as an appetizer.
