A Salad with Tuna and Bitter Melon

A Salad with Tuna and Bitter Melon

The bitterness of the bitter melon mysteriously disappears when you use it in this salad. It's a dish that could be both Japanese and Western.

Ingredients: 4 servings

Bitter melon
Canned tuna
1 can (80 g)
1/2 teaspoon
2-3 tablespoons
Lemon juice
1 teaspoon

1. Slice the bitter melon vertically, remove the seeds and slice thinly. Rub with some salt (not listed). Boil water in a pot, add the bitter melon and when it comes to a boil, remove and drain. Soak in water, then squeeze out.
2. Thinly slice an onion and soak in water for about 10 minutes. Drain and squeeze out the water with your hands.
3. In a bowl, combine the bitter melon, onion, and tuna flakes and add mayonnaise and lemon juice. Taste, and add salt and pepper if necessary.

Story Behind this Recipe

It's not so bitter, so even kids will eat this. The salad has a lot of vitamins, so it's good for your skin when you get a sunburn in the summer.
