These are the eggplants I used. Usually they come in a pack of 5 small ones. I bought the tuna can in a pack of 4 because it's cheaper in bulk.
Mix the ● ingredients. I used Doubanjiang spicy bean paste in liquid form.
Wash the eggplants well and cut into small pieces. Use as is without soaking in water.
Pour the contents of the tuna can, oil and all, into a pan and fry the eggplant. Add more oil if necessary.
When the eggplant is cooked through, add the combined ● ingredients. Coat the eggplant and drizzle sesame oil.
Transfer to a serving plate, sprinkle white sesame seeds and chopped leek, and it's done.
Story Behind this Recipe
I wanted to eat Mapo Eggplant but I didn't have minced meat. So I made this with canned tuna. Surprisingly my kids loved it and a pack of eggplants was quickly used up.
I've simplified the ingredients. I like this spicy... but a teaspoon of Doubanjiang spicy bean paste is only slightly spicy. My daughter doesn't like spicy food but she can handle this! It will really stimulate your appetite.
