Fluffy Melt-In-Your-Mouth Muffins

Fluffy Melt-In-Your-Mouth Muffins

With margarine instead of butter! You can make these just by mixing everything together in one bowl. Despite that, they're surprisingly rich!

Ingredients: 12 muffins

60 g
80 g
White flour
130 g
Baking powder
1 teaspoon
For decoration
Granulated sugar, cinnamon sugar, powdered sugar
as needed

1. Add the margarine to a bowl and cream with a whisk until pale.
2. Add the sugar in 2 - 3 batches and mix well after each addition. Keep mixing well until the mixture thickens.
3. Add the beaten egg in 2 - 3 batches and mix vigorously until the mixture becomes fluffy. Don't add too much egg at once or you risk the mixture separating.
4. Switch to a rubber spatula and add 1/3 of the milk. Blend well before sifting in 1/3 of the flour and baking powder.
5. Repeat this step twice more until you have a thick and fluffy completed plain batter You can also make coffee and matcha batter from this.
6. Pour the mixture into your muffin cups until about 70% full. Sprinkle on some granulated sugar, cinnamon sugar or whatever you plan to top your muffins with, and put in the oven. Bake for 25 minutes or until golden brown at 180°C.
7. When they're just done, the outside will be crispy with a soft and fluffy center that melts in your mouth.
8. I made half of these with cinnamon sugar and half with granulated sugar.
