Thai-style Somen Noodles With Fish Sauce

My favorite is somen noodles with mentsuyu sauce, but this is a quick and easy dish using fish sauce, which I love!

Ingredients: 3-4 servings

Ground pork
250 g
Chinese chives
1 bunch
Somen noodles
300 g
Fish sauce
1 to 2 tablespoons
Garlic and ginger
1 clove and 1 piece each
Lemon juice
from 1/2 a lemon
Chicken stock granules
1 tablespoon


1. Make the soup by mixing together 500 ml of water and 1 tablespoon of chicken soup stock granules. The soup can be warm or soft, whichever you prefer.
2. Cut the chives into 4 to 5 cm long pieces, and finely chop the garlic and ginger.
3. Heat some sesame oil in a frying pan and stir fry the garlic and ginger.
4. Add the ground meat and stir fry. When it's cooked, add the garlic, mix quickly and add the fish sauce. Drizzle the soy sauce around the surface of the pan and mix in.
5. Cook the somen noodles, drain and rinse and wash well under running water to remove any surface stickiness. Drain well.
6. Arrange the somen noodles on a plate, top with the stir fry and pour plenty of the sauce from Step 1.
7. Add the lemon juice and it's done.

Story Behind this Recipe

I wanted to try another Cookpad recipe that called for pork and Chinese chives, but I only had ground pork. (Rats!) But I decided go to go through with cooking anyway, and it turned out delicious!
