Easy Avocado and Potato Salad (Good For Your Complexion)

A potato salad that's simply mixed with avocado and mayonnaise. I like this better than regular potato salads. Avocados are full of vitamins, so it may even improve your skin.

Ingredients: 4 to 5 servings

3 medium
3 tablespoons
2 small
Lemon juice
1 teaspoon
Salt and pepper
to taste


1. Peel and boil the potatoes until tender. Drain well and return to the pan, and shake around until completely dry and floury. Mash up roughly. Slice the cucumbers thinly, sprinkle lightly with salt and squeeze out tightly.
2. Mash up the avocado into a paste, sprinkle with lemon juice and mix with mayonnaise and salt and pepper. The avocado can be roughly mashed too.
3. Mix it all together and done!!
4. Turn this into an avocado and potato gratin the next day. Put leftover salad into a heatproof dish, top with some cheese and bake in a toaster oven. Too easy, and so good!!
5. It also works really well as a sandwich filling.

Story Behind this Recipe

I was going to make an avocado salad, when I found some potatoes. Avocados go well with, I decided to make potato salad, which I love! And that's how this recipe came to be. I really recommend it!!!
