Here's healthy cottage cheese that's made with soy milk. It should be lower in cholesterol compared to the regular kind. Serve it with a salad, or enjoy it as a healthy snack. It's vegetarian-friendly, too!
Pour the soy milk into a pan over heat. Warm until it's about 60℃ (slightly bubbly on the edges). Turn the heat off.
Add lemon juice and mix well. The mixture separates after 10 minutes, so stir it again.
Pass it through a fine mesh strainer or a paper towel. When it's drained enough, mix in the salt to finish.

When I made Cookpad user sumuyome's "Cottage Cheese with Low Fat Milk," I wondered if I could make it with soy milk. It actually turned out quite nicely .
This "cheese" turns into a rich Japanese-style dessert when served with kinako or kuromitsu sauce. Keep in mind that you'll end up with tons of whey. We drink it with honey because it's said to be highly nutritious, but some of it goes to waste.
