Spicy Zha Jiang-Style Udon Noodles

You can serve the dipping sauce and the noodles hot or chilled. The sauce is very spicy, so it really perks up your appetite. Why not try this for lunch?

Ingredients: 2 servings

Prepared udon noodles
2 servings
Mixed ground beef and pork
200 g
Fresh shiitake mushrooms
Green bell pepper (large)
Green onion (chopped)
10 cm's worth
Ginger (finely chopped)
about 2 teaspoons
Red chilli pepper (sliced into rounds)
To taste
Sesame oil
1 teaspoon
Vegetable oil
1 teaspoon
○ Water
250 ml
○ Chicken soup stock granules
1 1/2 teaspoons
◎ Sake
1 and 1/2 tablespoons
◎ Mirin
3 tablespoons
◎ Red miso
2 tablespoons
◎ Doubanjiang
1/2 teaspoon
◎ Soy sauce
1 teaspoon
◎ Tianmianjang bean sauce
2 teaspoons


1. Stir-fry the chopped chili pepper, ginger and green onion in the sesame oil and vegetable oil. Add the ground meat and stir-fry. Add the shiitake mushrooms, coarsely chopped, and stir-fry as well.
2. Chop up the bell pepper and add to the pan and stir fry quickly. Add the ○ ingredients, bring to a boil and skim off the scum from the simmering surface. Season with the ◎ ingredients.
3. Finished! Serve the sauce on the side with the cooked noodles. To eat, dip the noodles into the sauce.
