Menchikatsu - Japanese Style Fried Hamburg Steak

Menchikatu, a delicious fried flavored Hamburg steak that is always a popular dish in Japan.


Ground Pork
1 lb
Ground beef
1/2 lb
Kosher salt
1/2 Tbs
Consommé granule
1 tsp
Brown sugar
1 Tbs
Freshly ground black pepper
1/8 tsp
Freshly grated nutmeg
1/8 tsp
Bread crumbs
3/4 cups
White wine
1/4 cup
1/4 cup
All purpose flour
as needed
Beaten eggs
as needed
Bread crumbs
as needed
Oil for frying
as needed


1. In a small bowl, soak the bread crumbs in the white wine and whole milk.
2. Mince the onion.
3. In a large bowl, mix together the ground pork, ground beef, minced onion, salt, pepper, consommé granules, sugar, grated nutmeg, and the egg.
4. Add the soaked bread crumbs into the meat mixture and mix well until it becomes sticky.
5. Shape the meat.
6. Coat each patty with flour and dip into the beaten eggs until fully coated, then cover with bread crumbs.
8. Heat the vegetable oil at approximately 340F and fry carefully in the oil until the bread crumbs are golden brown and crispy.
9. Place the fried meat patties in a vertical position on a metal rack, over a paper towel covered tray. (The oil drains better in a vertical position.)
10. Serve with sauce (Tonkatsu sauce) as desired.

Story Behind this Recipe

This delicious fried hamburg patty was a favorite food of mine as a child and teenager. I enjoyed stopping by the butcher shop with my mother or friends to eat this treat.
