Mini Sushi Cakes

Mini Sushi Cakes

I made these mini sushi cakes for Hinamatsuri Girl's Day Festival.
They're great for Children's Day Festivals and other parties.

Ingredients: Worth 4 pudding cups

Hot cooked rice
as needed
〇Salmon roe
as needed
〇Salmon flakes
as needed
〇Shiso leaf
●Canned tuna (packed in water)
1/2 can
4 slices
●Frozen peeled shrimp
to taste
◇Scrambled eggs
1 egg
◇Sakura Denbu
to taste
◇Nozawana (Japanese greens)
to taste
◆Tuna sukimi (bits scraped from the bones)
2 tablespoons
◆Green onions

1. Lay a sheet of plastic wrap in a pudding cup or a glass that you're using as a mold. Pack in the rice as if you were making hand molded sushi.
2. Here's sushi with salmon roe and salmon flakes mixed into the rice. I sandwiched a shiso leaf in-between.
3. Here, I mixed the canned tuna into the rice. In-between the layers, I sandwiched some avocado mixed with mayonnaise and put shrimp and avocado on top. It's delicious with soy sauce and mayonnaise.
4. Into the mold, press in rice mixed with salt and peppered scrambled eggs, rice with sakura denbu, scrambled eggs, and rice with chopped nozawana.
5. Press in the maguro sukimi on the bottom, then pack the rice, green onions, then rice.
6. From the mold, take out the plastic wrap with the sushi inside. Flip it over so that the bottom layer will come on top, then serve.

Story Behind this Recipe

I came up with this after thinking about a nice and colorful menu for the Hinamatsuri Girl's Day Festival.
