Shred cabbage and carrots or chop it finely. Sprinkle with salt (it's easier to drain the excess water if you shred it).
Squeeze and drain water from the carrot and cabbage. Sprinkle lemon juice and chill in the refrigerator.

I wanted to make light coleslaw.
If you use regular cabbage, microwave to soften. Adjust the seasonings to taste. Add corn if you like. I recommend using whole grain mustard for adults Add a little bit of mayonnaise and honey if you eat on the next day.
